Afterwards I went to Wally world and bought a Weight Watcher's Scale for our home. Josh weighed himself, and since going to the doctor's two weeks ago he has lost approximately 11 pounds. So Yay Josh! It's great that he's been doing it with me because it makes it so much easier to be good, but the downside is that men lose faster and he's beating the pants off of me! Oh well. It's awesome that he's so into it.
Well I assume that the family is going to be supportive of eating healthy while we're at the cabin next week. I'll be making the much-requested Cilantro Lime Chicken with Corn and Avacado Salsa with the dressing from Bajio. You're welcome.
Cilantro Lime Chicken with Corn and Avacado Salsa:
- Chicken Breasts (as many as you need)
- Limes
- Cilantro
- Salt and Pepper
In a sealable bag put chicken breasts, chopped cilantro and some salt and pepper to taste in a bag. Squeeze in lime juice. Let marinate at least 20 minutes.
Salsa:
- Bag of corn, thawed
- Avacados, chopped
- Cilantro
- Salt and Pepper to taste
Mix ingredients together in a bowl,
Add other salsa ingredients if you would like: ie. Mango, (as you know I'm allergic), tomatoes, green onion, hot peppers.
Grill chicken until cooked. Serve chicken and salsa with lettuce, black beans, tomatoes, or other mexican stuff.
This recipe is really easy. The only way you can mess it up is if you put in way too much salt and pepper.

Wally's World? Is that really a store in Toolee? You could probably mess up the chicken by putting lime peels in the salsa:) Congrats to you guys on the Weight Watchers, that is great!
